
These sticky miso bananas are quick & easy to make and the combination of flavours are heaven
RECIPE (serves 2):
15g butter
25g light brown sugar
1/2 tbsp white miso paste
Pinch of ground cardamom
2 bananas, peeled and halved lengthways
To serve: a few spoonfuls of coconut yoghurt mixed with the juice and zest of half a lime and a touch of freshly grated ginger, sesame seeds
1. Add the butter to a frying pan on medium heat and cook until it becomes nutty and brown.
Add the brown sugar and stir. Then add the miso paste and stir until you have a smooth caramel.
Add in the cardamom and gently lay the bananas in the pan cut side down.
Pan fry for a few minutes until the bananas become sticky and golden. Flip and repeat.
Serve the bananas hot with spoonfuls of the zingy coconut yoghurt and a sprinkle of sesame seeds!
